Watermelon Cucumber Salad

This watermelon cucumber salad is crisp, refreshing, and full of clean, simple flavor. It's the perfect no-cook side dish for hot days, picnics, or light lunches.

Ingredients
  

  • 4 cups cubed seedless watermelon
  • 1 large cucumber thinly sliced or chopped
  • 2 tablespoons chopped fresh mint
  • 1 lime juiced
  • 1/4 teaspoon sea salt
  • 1 tablespoon olive oil optional
  • 1/4 cup crumbled feta cheese optional

Instructions
 

  • Add the cubed watermelon to a large mixing bowl.
  • Add the sliced or chopped cucumber to the bowl.
  • Sprinkle the chopped mint evenly over the fruit and veggies.
  • Squeeze the juice of one lime directly over the salad.
  • Add the sea salt and drizzle with olive oil if using.
  • Toss everything gently to combine without smashing the watermelon.
  • Sprinkle the feta on top if you're using it, and give it one final light toss.
  • Serve immediately for best flavor and texture, or chill for up to two hours before serving.
  • Store any leftovers in an airtight container in the fridge for up to 24 hours.
