Ingredients
  

For the Cupcake

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 1/2 cup diced fresh peaches
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

For the Peach Buttercream

  • 1/2 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 tablespoons peach puree
  • 1-2 tablespoons milk

Instructions
 

  • Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In another bowl, beat butter and sugar until light and fluffy. Add eggs one at a time, mixing well.
  • Mix in vanilla extract and milk.
  • Gently fold in the peaches.
  • Gradually add dry ingredients to wet mixture and mix until just combined.
  • Fill cupcake liners about 2/3 full and bake for 18-20 minutes.
  • For buttercream, beat butter until creamy, then add powdered sugar and peach puree. Add milk as needed for desired consistency.
  • Frost cooled cupcakes and garnish with a slice of fresh peach.
