Red, White, and Blue Cheesecake Bars

Cheesecake bars are rich and creamy, and they can be made even more special with a patriotic twist. Swirl in some blueberry and strawberry puree to create a marbled effect. These bars are easy to serve and can be made ahead of time, making them a convenient option for your celebration.
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 16 oz cream cheese softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup blueberry puree
- 1/2 cup strawberry puree
- Red and blue food coloring optional
Preheat oven to 325°F (165°C). Line a 9x13 inch baking pan with parchment paper.
Mix the graham cracker crumbs and melted butter. Press into the bottom of the pan to form the crust.
In a large bowl, beat the cream cheese, sugar, and vanilla until smooth. Add the eggs, one at a time, beating well after each addition.
Divide the cream cheese mixture into three bowls. Leave one plain, mix one with blueberry puree (and blue food coloring if using), and one with strawberry puree (and red food coloring if using).
Drop spoonfuls of each mixture over the crust and swirl with a knife to create a marbled effect.
Bake for 30-35 minutes, until the center is set. Cool completely in the pan, then refrigerate for at least 2 hours before cutting into bars.
