Pumpkin Spice Cookies

These soft, spiced cookies capture the essence of fall with flavors of cinnamon, nutmeg, and ginger. They are easy to make and perfect for a cozy holiday treat.
- 2 cups flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp ginger
- 1 cup canned pumpkin
- 1 cup sugar
- 1/2 cup brown sugar
- 1/2 cup butter softened
- 1 egg
- 1 tsp vanilla
Preheat the oven to 350°F.
Mix dry ingredients in one bowl.
In another bowl, cream butter and sugars together. Add the egg, vanilla, and pumpkin. Mix well.
Slowly add the dry ingredients to the wet ingredients, mixing until combined.
Drop spoonfuls of dough onto a baking sheet. Bake for 12-15 minutes, or until edges are golden.
