Pumpkin Pancakes from Scratch

Fluffy and full of warm pumpkin spice, these from-scratch pancakes are ideal for weekend breakfasts. Each bite is soft and perfectly balanced with hints of cinnamon, nutmeg, and ginger.

Ingredients
  

  • cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • 1 cup pumpkin puree
  • cups milk or dairy-free milk
  • 2 tablespoons sugar
  • 1 egg or flaxseed egg for vegan
  • 2 tablespoons melted butter or coconut oil for vegan

Instructions
 

  • In a bowl, combine flour, baking powder, salt, cinnamon, nutmeg, and ginger.
  • In another bowl, mix pumpkin puree, milk, sugar, egg, and melted butter.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Heat a non-stick skillet over medium heat.
  • Spoon ¼ cup of batter for each pancake onto the skillet.
  • Cook for 2-3 minutes per side or until golden.
  • Serve with your favorite syrup or a sprinkle of powdered sugar.
