Ingredients
  

  • cups all-purpose flour or gluten-free flour blend
  • 1 cup pumpkin puree
  • ¾ cup sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp cinnamon
  • ½ tsp baking soda
  • ¼ tsp salt

Instructions
 

  • Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
  • In a large bowl, mix pumpkin, sugar, oil, and eggs.
  • In another bowl, combine flour, cinnamon, baking soda, and salt.
  • Add dry ingredients to the pumpkin mixture and stir until just combined.
  • Divide batter evenly among muffin cups.
  • Bake for 20-25 minutes or until a toothpick comes out clean.
