Pumpkin Muffins

- 1½ cups all-purpose flour or gluten-free flour blend
- 1 cup pumpkin puree
- ¾ cup sugar
- ½ cup vegetable oil
- 2 large eggs
- 1 tsp cinnamon
- ½ tsp baking soda
- ¼ tsp salt
Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, mix pumpkin, sugar, oil, and eggs.
In another bowl, combine flour, cinnamon, baking soda, and salt.
Add dry ingredients to the pumpkin mixture and stir until just combined.
Divide batter evenly among muffin cups.
Bake for 20-25 minutes or until a toothpick comes out clean.
