- 1 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- ½ teaspoon nutmeg
- ½ teaspoon ground cloves
- ½ teaspoon salt
- 1 cup canned pumpkin puree
- ½ cup vegetable oil
- 2 large eggs
- 1 ½ cups granulated sugar
- 1 teaspoon vanilla extract
Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly.
In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ground cloves, and salt. Set aside.
In another bowl, combine the pumpkin puree, vegetable oil, eggs, sugar, and vanilla extract. Mix until smooth.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Do not overmix.
Spoon the batter into the muffin tin, filling each cup about two-thirds full.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
