Ingredients

fresh pineapple
chopped into small pieces (about the size of corn kernels)

red bell pepper
finely chopped
1/2
red onion
finely diced

jalapeño
seeds removed and finely chopped
1/4

fresh cilantro
chopped
Juice of 1 lime
1/4
teaspoon
salt
or to taste
Instructions
Add the chopped pineapple to a medium mixing bowl.
Add the finely chopped red bell pepper to the bowl.
Add the diced red onion.
Add the finely chopped jalapeño.
Add the chopped cilantro.
Squeeze the juice of 1 lime over the mixture.
Sprinkle with salt.
Stir everything together until evenly combined.
Taste and adjust lime juice or salt if needed.
Serve immediately or cover and chill until ready to use.
Notes
Storage Tip: Store in an airtight container in the refrigerator for up to 3 days. Stir before serving. Do not freeze.
