Pineapple Salsa

Ingredients
  

  • 2 cups fresh pineapple chopped into small pieces (about the size of corn kernels)
  • 1 red bell pepper finely chopped
  • 1/2 red onion finely diced
  • 1 jalapeño seeds removed and finely chopped
  • 1/4 cup fresh cilantro chopped
  • Juice of 1 lime
  • 1/4 teaspoon salt or to taste

Instructions
 

  • Add the chopped pineapple to a medium mixing bowl.
  • Add the finely chopped red bell pepper to the bowl.
  • Add the diced red onion.
  • Add the finely chopped jalapeño.
  • Add the chopped cilantro.
  • Squeeze the juice of 1 lime over the mixture.
  • Sprinkle with salt.
  • Stir everything together until evenly combined.
  • Taste and adjust lime juice or salt if needed.
  • Serve immediately or cover and chill until ready to use.

Notes

Storage Tip: Store in an airtight container in the refrigerator for up to 3 days. Stir before serving. Do not freeze.
