Pecan Pie Cookies

These bite-sized cookies pack the rich, buttery flavor of a pecan pie with a caramelized pecan filling. They’re perfect for those who love pecan pie but want a smaller, easy-to-eat treat.

Ingredients
  

  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 cup butter softened
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp vanilla
  • 1 egg yolk
  • 3/4 cup pecans chopped
  • 1/4 cup corn syrup
  • 1/4 cup sugar for the filling

Instructions
 

  • Preheat oven to 350°F.
  • Cream butter and sugars together until smooth. Add the egg yolk and vanilla.
  • Mix in the flour and salt. Form dough into small balls and press down to create a small indent in the center of each.
  • Mix the chopped pecans, corn syrup, and sugar to create the filling. Spoon a little into the center of each cookie.
  • Bake for 12-15 minutes.
