One-Pot Cheesy Taco Pasta

It's quick, delicious, and best of all, requires minimal cleanup. Perfect for those busy weeknights when you want something tasty but don't have the time or energy for a complex meal.

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound ground beef or ground turkey/chicken for a lighter option
  • 1 small onion diced
  • 2 cloves of garlic minced
  • 1 packet of taco seasoning or make your own with chili powder, cumin, paprika, salt, and pepper
  • 2 cups of beef or chicken broth
  • 1 15-ounce can of tomato sauce
  • 2 cups of uncooked elbow macaroni or any pasta of your choice
  • 1 cup of shredded cheddar cheese or a blend of your favorite cheeses
  • Optional toppings: chopped tomatoes green onions, sour cream, avocado

Instructions
 

  • Cook the Meat: In a large skillet or pot, heat the olive oil over medium heat. Add the ground beef and onion, cooking until the meat is browned and the onion is soft. Drain any excess grease.
  • Add Flavors: Stir in the minced garlic and taco seasoning. Cook for about a minute until fragrant.
  • Combine Ingredients: Pour in the broth and tomato sauce. Bring the mixture to a boil.
  • Add the Pasta: Stir in the uncooked pasta. Reduce heat to a simmer and cover the pot. Let it cook for about 15-20 minutes, or until the pasta is tender and most of the liquid is absorbed.
  • Cheese It Up: Remove the pot from heat. Stir in the shredded cheese until it's melted and well-combined.
  • Serve and Enjoy: Serve hot with your choice of toppings like chopped tomatoes, green onions, sour cream, or avocado.
