Ingredients
  

  • 1 large egg yolk
  • 1 teaspoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 cup neutral oil avocado oil or vegetable oil
  • 1/4 teaspoon salt

Instructions
 

  • Place the egg yolk, Dijon mustard, and lemon juice in a medium-sized mixing bowl.
  • Whisk the ingredients together until smooth and combined.
  • While whisking continuously, very slowly drizzle in the oil in a thin stream, starting with just a few drops at a time.
  • As the mixture begins to thicken, you can add the oil more steadily, but keep whisking constantly to ensure the mayonnaise emulsifies.
  • Once all the oil is incorporated and the mayo has reached your desired consistency, stir in the salt.
  • Taste the mayonnaise and adjust the seasoning, adding more lemon juice or salt if needed.
  • Transfer the mayonnaise to an airtight container and refrigerate immediately.
