Herb-Roasted Root Vegetables

Ingredients
  

  • 4 cups mixed root vegetables carrots, parsnips, sweet potatoes, diced
  • 2 tbsp olive oil
  • 1 tbsp fresh rosemary chopped
  • 1 tbsp fresh thyme chopped
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F.
  • Toss vegetables with olive oil, salt, and herbs.
  • Spread on a baking sheet and roast for 30 minutes, or until tender.
