BANANA OAT PANCAKES

Soft, naturally sweet three-ingredient pancakes made in a blender. No added sugar, easy for little hands to grab, and freezer-friendly.

Ingredients
  

  • 1 ripe banana
  • 1 large egg
  • 1/2 cup rolled oats
  • 1 pinch cinnamon optional
  • 1 teaspoon butter for the pan

Instructions
 

  • Add the banana, egg, oats, and cinnamon to a blender.
  • Blend until the batter is smooth and pourable.
  • Heat the butter in a nonstick pan over medium-low heat.
  • Pour small circles of batter, about two tablespoons each.
  • Cook until bubbles form on top, about two minutes.
  • Flip gently and cook one more minute.
  • Let the pancakes cool before serving to little hands.

Notes

Keep the heat low so the pancakes do not brown too fast. Make a double batch and freeze the extras, then reheat in the toaster on busy mornings.
