Ingredients
  

  • 2 large ripe avocados
  • 2 large eggs
  • 1 cup granulated sugar
  • ½ cup plain yogurt
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions
 

  • Preheat the oven to 350°F.
  • Grease a standard loaf pan and set it aside.
  • Mash 2 large ripe avocados in a mixing bowl until smooth.
  • Add 2 large eggs to the mashed avocado and whisk until combined.
  • Add 1 cup of sugar, ½ cup of plain yogurt, and 1 teaspoon of vanilla extract.
  • Stir the wet ingredients together until fully blended.
  • In a separate bowl, sift 2 cups of all-purpose flour.
  • Add 1 teaspoon of baking soda and ½ teaspoon of salt to the flour.
  • Gradually fold the dry ingredients into the wet mixture.
  • Mix gently to combine without overmixing.
  • Pour the batter into the greased loaf pan.
  • Smooth the top with a spatula to create an even surface.
  • Bake in the preheated oven for 50–60 minutes.
  • Insert a toothpick into the center to check doneness.
  • If the toothpick comes out clean, remove the bread from the oven.
  • Cool the bread in the pan for 10 minutes.
  • Transfer the bread to a wire rack to cool completely.
  • Slice the bread and serve as desired.
