Preheat the oven to 350°F.
Grease a standard loaf pan and set it aside.
Mash 2 large ripe avocados in a mixing bowl until smooth.
Add 2 large eggs to the mashed avocado and whisk until combined.
Add 1 cup of sugar, ½ cup of plain yogurt, and 1 teaspoon of vanilla extract.
Stir the wet ingredients together until fully blended.
In a separate bowl, sift 2 cups of all-purpose flour.
Add 1 teaspoon of baking soda and ½ teaspoon of salt to the flour.
Gradually fold the dry ingredients into the wet mixture.
Mix gently to combine without overmixing.
Pour the batter into the greased loaf pan.
Smooth the top with a spatula to create an even surface.
Bake in the preheated oven for 50–60 minutes.
Insert a toothpick into the center to check doneness.
If the toothpick comes out clean, remove the bread from the oven.
Cool the bread in the pan for 10 minutes.
Transfer the bread to a wire rack to cool completely.
Slice the bread and serve as desired.
